Tofu Benedict
Yes, it’s possible. That’s the good news. The even better news is that it’s easy, too. I’ve spent my share of long hours making complicated concotions to replicate Béarnaise, the sumptuous egg sauce that’s the crowning glory of Eggs Benedict. I puréed tofu and made vinegar reductions and hunted down unusual herbs and spices to lift the eggless and butterless sauce from dreary to divine. Needless to say, it fell far short of divinity. Date-Walnut Bread
I’ve grown quite fond of dates lately. I mean the dried fruit, of course. (I’ve always been fond of the other kind, with my sweetheart husband.) Dried dates used to make me nervous, candy-sweet and high in calories as they are. But in the last few weeks I started snacking on them in order to curb my cravings for dark chocolate. Sometimes I get annoyingly ambitious in the kitchen. If I overhear someone say that he or she doesn’t like this or that food, I think (and thank goodness I don’t always say it): you just haven’t had it prepared the right way.
