Balsamic Broccoli & Chickpeas with Crispy Shallots
The challenge I’m giving myself this year is to cook more simply. Fewer ingredients, fewer steps and, not least, fewer dishes to wash at the end. Warm Red Rice Salad with Kale & Chickpeas
This dish was a happy accident. The idea to put these particular ingredients together came from their colors. I know, this isn’t the sign of a very sophisticated cook. But I resort to this sometimes when inspiration can’t be coaxed any other way. I started with the rusty hue of red rice, a type of jasmine rice that a fellow cook highly recommended and that I ended up stocking up on, I liked its flavor so much.
