Smoky-Sweet Seitan Stew

There’s a bit of the unexpected in every spoonful of this stew. The orange and white chunks aren’t the traditional carrots and potatoes but, rather, sweet potato and celery root. Then there’s the bite of chipotle counterbalanced by the sweetness of paprika and dried basil, and, at last, the startling pairing of fresh basil with cilantro to finish the dish.
