Phyllo Pie with Leeks, Fennel & Zucchini
I created this pie for a lunch with my sister. We were both in need of some healthy fare, after having indulged in too many sweets (that would be me, post baking frenzy) and dining out (that would be my sister, who is a high-powered career woman with an incredibly busy schedule). Cream of Fennel & Zucchini Soup
Rarely does the first draft of a recipe turn out just right. This soup is a delightful exception. When I set out to make it, I was sure it was going to turn out bland. With a mere two vegetables, one of which isn’t known for being a flavor powerhouse, and no vegetable broth (I happened to be out), I expected to be disappointed. Well, I stand corrected.
